We’re thrilled to share that our founder, Kristina Lavallee, was recently featured as a baking expert in Southern Living’s article, “Will Storing A Cake In The Oven Overnight Keep It Fresh?” In the piece, Kristina offers professional insights on the safety and practicality of storing cakes in the oven—a method some may consider for keeping cakes moist.

🧁 Kristina’s Expert Advice on Cake Storage
In the article, Kristina emphasizes the importance of food safety when it comes to cake storage. She explains that under the Florida Food Code, frostings or fillings containing butter, milk, eggs, or cream cheese are classified as Time/Temperature Control for Safety (TCS) foods. Such items must be refrigerated below 41°F to prevent bacterial growth. Storing these cakes in an oven, even when turned off, can pose risks due to the ambient temperature falling within the "danger zone" of 40°F to 140°F, where bacteria can thrive.
Kristina’s contribution underscores her commitment to not only creating delicious cakes but also ensuring they are stored safely for her clients.
