She notes that the combination of high heat, harsh detergent and prolonged water exposure can cause wood fibers to crack, warp or splinter — stripping away the protective natural oils and leaving the pieces porous, which can harbor bacteria. “As a professional chef, I would never run wooden utensils, cutting boards, or servingware through the dishwasher,” Kristina says.
